Who are "the pangolins"? Kei doesn't have any specific summon able to dig tunnels quickly, and she can't call pangolins who aren't her summon.
She can call Pandaa and you do know that pangolins are pretty good diggers. Exactly how good you're not sure, but certainly better than humans.
Would the Iron Skin allow for Akane to quickly dig with her bare hands or would that break the skill?
As long as the soil wasn't too gravelly it should be fine. It won't let her dig at super-speed though, just at max human rate.
I don't remember if he has a maximum allowed distance from Keiko, though.
He does not. Clones have a limit of about 150m, but summons can go as far as they like.
If viable, Syrup Trap, Suiton/Raiton combo, or Barrier Method Formation can be used. Clones can do this, too.
So far there's no combination of jutsu available to you that allow you to safely combine water and lightning. Syrup Trap isn't conductive and Noburi's whip will conduct electricity but he'll be zapped as well.
Can she hit multiple people like she did us back at Hidden Swamp (when we learned Dispel)? Will this dilute effectiveness or no? Things to ask her.
Mari can do genjutsu on three people at once, right? Like she did on us when we left hidden swamp? Ask her about the upper limits there. Maybe she can tie up enough people to make the fights not suck for us.
The only genjutsu any of you are aware of that breaks the "one target only" rule is Truth Lost in the Fog, which she *really* doesn't want to use.
Chakra: CHAKRA BOOST EVERYTHING
Note that you don't actually have enough chakra to boost everything. (Although I've updated everyone's chakra back to where it should be.)

Is there time for Kei to go and negotiate a new summon who could help us out in actual combat?
Nope.
Could we make time by surrounding ourselves in MEW and setting up traps, so that we can weather the enemy's assualt for a bit longer?
You could try. Note that MEW is normal granite, so anything that will pierce rock will cut through it.
Can we spam dozens of clones/elemental clones and send them running in every direction to obfuscate our direction of travel (picking a new direction to run in, so they can't just follow the path we were originally going in, obviously)? Distance limit on clones/elemental clones?
You don't have the chakra for that, unfortunately. (Note that Mari's ability to summon a dozen clones back in VHitM was an error based on a mistaken formula in her spreadsheet -- her sheet was originally copied from Noburi instead of from the normal template, so her chakra was 2 or 3 times higher than it should have been.) Once we noticed the problem we cut her chakra back to the proper levels.
Can Akane use Firefly jutsu to start a forest fire to make it more hazardous to follow us?
Yes. It will be hazardous to you too, though.
Could we henge into someone with "run on sight" orders to get the enemies to disengage as soon as they spot us?
Orochimaru and his top enforcers? Do we even know what they look like?
The only such person you know of is Yagura, the Mizukage. And yes, you could do that. It's unlikely that the people coming after you would know what he looked like, though.
Maybe we could climb a tree, throw PMYF kunai in a 45 degree arc, and ride that 100mph flightpath as long as we can before making an elemental clone and subbing with it. That's got to be more distance than throwing from ground level.

Yes, although there's some pretty significant risk with that trick. The clone can only appear within 3m of you, which means you'll be stopped, but you'll be stopped above the trees and will promptly fall.
Could we set up clones to pretend to be us with a severe injury that forced us to stop? It might slow them down for a few seconds.
Yes, although the clones will pop once you get more than 150m away.

To the same extent that wind is -- you don't see the wind itself, but you see the leaves and junk that it picks up.
e: Either way, assuming Mari's good enough at it to do so, make use of it to speed up Kei's throws, maybe?
The wall is really intended to block kunai; it blows up.
