I stand by the thought that it would have been best to keep her in the dark.
But Sabrina is not like that, so that'd never happen.

Ignoring the question of morality, that's just not practical. The Incubator will use this information to try to drive Sayaka away from the group. We can't keep Sayaka in the dark in the long run; it's physically impossible. All we can do is mitigate it as best we can, and not hiding it is part of that.

Honestly, it'd be best to trust Sayaka. She'll resent us if we keep trying to keep it a secret from her, and an overlooked part of her character is how much she values MERCY as much as Justice, even if she's not an outright goddess of penitence like Madoka is.

Remember, this is the same person who ultimately forgave and came to cherish Kyouko, who actively, deliberately, and repeatedly let monsters kill humans for her own personal benefit. I think she can be brought to forgive Oriko for something that didn't even kill anyone, and which had a non-selfish (on paper) reason.

I mean, shit, after Sayaka hears Kyouko's reasons, she makes a point of refusing to get angry over Kyouko ever again, and doesn't engage her own attempts to bait her. If Sayaka understood Oriko, her heart would soften. She can't not, even given how personal it is.

It'd take time, and we'd need to do a lot of intervening, but Sayaka doesn't actually go and pick fights. Kyouko pretty much confronted her first every single fucking time. The only time Sayaka ever tries to initiate combat on her own is in Homura's Revenge, when Kyubey basically tells Sayaka that Homura murdered Mami.

Now that I think about it, there was an option a couple times regarding coobs which said "FLESH OF FALLEN ANGELS!" or something like that. What would that have done? Was that a reference? I didn't catch it.

Also, it is not physically impossible.
If we kill her or otherwise make is so that she is unable to hear the truth in some way, then she can be kept in the dark!

...of course that rather defeats the point of it, but anyways-

The fact that we decided to say the truth doesn't mean she'll let the fact that we hid something this big from her slide.
 
There really isn't a easy way to introduce someone to the person that burned their house down. Especially not with Sayaka.

From what I understand, it's what the addicts say in the Max Payne games when they're high on hallucinogens.
 
I believe in that particular case it was a reference to Magical Girl Noir Quest, actually. 'Course, the MGNQ use of it would probably be a reference to Max Payne itself.

Sabrina bit down on the Incubator, savagely tearing a large chunk of it as she tore it apart. The small creature easily came apart, its insides being devoid of inner organs or bones, instead having a gel-like consistency.

'This is highly illogical.', the Incubator protested, as it's remaining portion squirmed in Sabrina's hands, spreading yet more red over Sabrina's - by now thouroughly drenched -overcoat. 'My flesh is actually moderately toxic to humans.'

Sabrina ignored it, chewing on its flesh with a thoughtful expression, before offering the remainder of the Incubator to a thouroughly disturbed Homura. "C'mon, try it! It tastes just like marshmallows dipped in battery acid!"

In the end, Homura could only give one response. "...Why do you know what battery acid tastes like?"
 
I seem to recall reading an actual (non-canon) manga or doujinshi about somebody telling Kyouko that Kyubey is full of marshmellow fluff, and her hunting down and eating every one of his bodies that she could find in response.
 
That's for just punching a hole in the wall. What more, burning down the whole house?
