Basically, Demona is a gargoyle who's racist against humans for...admittedly somewhat justifiable reasons, but she wound up causing a good deal of those reasons so...she's perfectly fine with killing humans as revenge for the people (gargoyles who were a part of her clan) they killed, and doesn't care if the humans involved are innocent or not, or even if they know gargoyles exist at all. She's had A few schemes to destroy New York but they've failed so far. Now through...I'm not so certain she'll fail again.

If it helps, I don't think she'll do.something like try to turn humans into gargoyles, because Puck wound up.doing something like that while working for her once and she was not happy with it.

Toffee. She's basically gargoyle Toffee.
 
I suppose the confirmations that A) She spends significant time on Earth and B) She isn't completely broken, can still make friends, and so forth are revelations that are worth having. Still, that's the second time we've been in the same city as her twice now, once with someone who would have literally recognized her on sight, sound, or possibly even mystic presence, is a bit annoying.

Imagine how Janna is going to feel...especially with that she was with Xanatos one of the people the Clan fights against.

So someone with legitimate grievances... but is so blinded by their hate they're willing to target humans who are completely uninvolved, and they don't care if members of their own species get hurt or killed along the way.

At least tell me she isn't functionally a god like Toffee is?

Good news, as far as we know she isn't. Still, remember Nightstone Industries, the company that made the overpriced coffee named after Hawaii? She's the CEO in her human guise. So she has quite a few resources at her claw/fingertips, and she's quite experienced with magic. Definitely much more beatable than Toffee, its just that she's probably a King in her own right, or at least a Prince.

Also, she has 0 compunctions about tearing down the Masquerade. And is a complete sociopath.

A bit more complicated than that, while she has been badly wronged it's also mixed with an utter refusal to take responsibility for her own actions mixed with some self-loathing, paranoia, and extreme self-destructive tendencies. She's like a bomb waiting to go off compared to Toffee cold mask of sanity, mix this with a genius, strategic mind that can outplay Xanatos when she's got her temper under control and she's effectively the gargoyle equivalent to a tactile missile strike.
