I want to point something out about Anno, you know that preview at the end of 3? He never planned on making the sequel that involved that preview, yeah, when he made that, he was intentionally giving us a a preview of something he wasn't going to make. We're lucky he decided to change his mind and that might not even be the case.

It's been so long since I've seen it but the one at the end of 1.0 was fairly accurate wasn't it? Of course I'm unable to find it now to check but I don't remember that one being too far out.
Of course like you said the one at the end of 2.0 was just completely different. Unless of course all of that stuff happened during the timeskip. I'm still interested in knowing what Gendo & Fuyutsuki were trekking up that mountain for.
