Non-canon but a Realta with the front gap filled in and some minor cosmetic changes wouldn't look bad to me.

Remove some of the extra structural bulk on the back and get rid of one of the "levels" back there to make things cleaner, or shrink those structures vertically. Then put a more normal nacelle up top and round the secondary hull a bit more. Put your cargo-bay (or Brig) and deflector down there then all critical systems outside of those in the main hull.

Makes me think of a graceful ice-skater or some odd rocket boat for some reason.

Not sure how common organic self-destructs are so I'm not sure if putting a brig closer to the warp core or the bridge is a better call. Ease of patrol vs Ease of escape/Difficulty for mutiny also seem like a tradeoff. Same logic on a cargo bay. Fortunately we're mostly doing looks!

Edit: Plus internal shields have to be a thing soon right? At least stupid strong structural integrity fields around the brig.

I also think this sounds like a bit like a Miranda class. I've never liked the Kelvin style with nacelle and secondary hill either side of the dish- just looks weird. Same for the 1/2 saucer Kelvin. The secondary would be too proportionally large
 
The in-line deflector option would seem to make sense.

It's going to mean the most versatile hull configuration for internal systems and ensure that if we mount our two phasers on the left and right edges of the saucer they will have near-total coverage of the ship.

Nah, more like "This is [insert vessel name here] calling, please come in" as the suspect vessel is getting Phaser'd to pieces and the tractor beam is engaged.

Put the cargo bay in the front half of whatever saucer you have and some aftermarket shops would probably mount a bank of concussion missile tubes :D.

Full saucer inline does fit with the whole KISS principle, makes refits easier, and would make it more likely this could land on a planet (still unlikely since QM hasn't called it out). But this should be smaller than an intrepid so who knows.

Not a warship, but I like the look of the nacell strut coming up out of the secondary hull.
