There is a normal human, with strength 5. Same as Ogre Tyrant.
Actually Boris is S5. It was admittedly an older edition though.No there aren't. On TT even the most elite humans like Kurt Helborg, Karl Franz, Louen Leoncoeur, Valten etc, etc have S4. The only humans on TT that have S5 are ones empowered by Chaos.
Basically on TT it goes:
S3: Standard human, elf dwarf troops
S4: Elite elves, dwarfs and humans, standard ogres
S5: Vampires, elite ogres and elite Chaos forces as well as some monsters
S6 and above: Practically solely the domain of different varieties of monsters and warmachines.
Or if you can have Strength 6 if you happen to be Settra the Imperishable.
Carrying around all of those titles must be a hell of a workout, my man can armwrestle a Giant if you believe tabletop stats.

No. Which is really weird. In fact, while generic GK have stats comparable to those of Chaos warriors/knights aside from T 3, hero units get no boost in stats from Grail Oath.
Hope our Vapor Tanks have the chance to shine soon, especially since can be great to use against dark elves in formation, their monsters, and even enemy artillery. Really want to see what they do in their first major battle, and the best part is that while obviously we don't want them destroyed they can be if needed and more can be made later.

Nope. It's possibly an artefact of having a really old armybook (Bretonnia was never updated beyond 6th edition), but Paladins have he exact same stats as Empire Captains, and Bretonnian Lords only have +1WS over Empire Generals.
Albeit Grail Knights are Toughness 3, compared to Chaos Warriors' T4.Yes. TT was pretty strict on it. Grail Knights, even heroic ones, on TT don't have S5. If you have your Bretonnian lord take the Grail Vow on TT, turning him into a Grail Knight, then he gets the magical attacks rule and Immune to Psychology rule, but no actual stat boost.
Aside from that Grail Knights in TT can also be taken as a rare unit in which the individual Grail Knight is statted like a mounted Chaos Warrior (Chaos Warriors also have S4) that has magical attacks and Immune to Psychology.
