The man Mount Everest is named after, Sir George Everest, objected to naming the mountain after himself as the name could not be easily written in Hindi nor pronounced by the local people and as it would be later discovered, the mountain had a name already in the form of Sagarmāthā. Let's honor the original name.
The original name (or at least the oldest name we know of) would actually be "Qomolangma," I think, which translates to "Holy Mother."

...which I also really quite like, since that might be the reaction someone has when they see this beauty for the first time

in fact...

[X] UFS Sagarmāthā
[X] UFS Qomolangma

assuming that the B- 7/11 overall score is an average of the score of each of the categories, (29/44 = 7.25/11, then rounded down) I wonder if we had been able to squeeze out an extra point somewhere the average would have been 30/44 instead of 29/44, which works out to 7.5/11. Possibly that gets rounded up to 8/11 and would have given us a B

Still a great ship obviously, i don't think the difference between B and B- means much of anything if at all, just could have been nice

[X] UFS Copernicus, named for astronomers and astrophysicists.
Nice and simple, also fits with the other TOS ship names like greased butter.

[X] UFS Everest, named for mountains.
[X] UFS Sagarmāthā
[X] UFS Friendship - named for space prodes.

So is this the start of Starfleets trafitoin of only building 12 ships of it's dedicated explorer classes?

Well, there's 5 of these ships counting the prototype. But ideally we'll get the number to 12 in the long run, and with the Connie's directly replacing them.

It amuses me that you could functionally name the entire 5-vessel tranche after different official names and nicknames for Everest.

UFS Everest
UFS Sagarmāthā
UFS Chomolungma/Qomolangma
UFS Zhūmùlǎngmǎ Fēng
UFS Shèngmǔ Fēng
UFS Deodungha

They're all good names, I'd be down for basically all of them. It's just that as I said, this is United Earth (to say nothing of the general themes of diversity and inclusiveness that Star Trek has always championed), why not showcase some parts of it that are typically overlooked by the tv show producers and writers? We've not exactly got the same sort of limits as they did when it comes to these things.

And thinking along those lines Starfleet ships that are named after things with multiple native names (such as the mountain in question) the exact name gets swapped around with each ship but the honours & awards are contiguous?

With the monster we designed, I am sure there will be acusations of Gunboat diplomacy any day now.
We could name the Class one of the following to ensure everyone knows how peacefull the Federation is!

USF Coexistence
USF Ambassador
USF Diplomacy
USF Unity
USF Peace
USF Peacefull Intentions

But for real if someone starts accusing the federation we cn reasonably point out the defacto and dejure slavery and classism/ caste system of the romulans, and the klingons conquering everyone around them to use them as ressource/industry stockpiles(Conviently not letting them advance beyond that). In contrast our ships will not fire their weapons all that often (and even then only in combat situations where the other side fired first or outright wars).

Repeat after me:

"Its an exploration ship, obviously, look at all that science and engineering space, does that look like a warship to you?"

continue to apply infallible logic until they give up.
"If it were a warship it would as many weapons as possible on it and if you look as the design docs from the development process you can clearly see the designers eschewed two whole phaser emitters from the final design, therefore it clearly is not a warship."
