Yes, the cannon 2280 Excelsior is two million tons. That'll set the mid-weight a lot higher. We might do ours in 2265-2270? That when it looks like a lot of new tech should be coming online from all the refits in the retrospectives.
Keep in mind the canon Constitution (per Memory Alpha, anyway) was a million tons, meanwhile Sayle's figure was like 200,000. There's nothing saying the Excelsior will be anywhere close to that 'two million tons' figure.

Much as I can understand the desire to go big to start ratcheting up towards our 2MT displacement Excelsior equivalent in around half a century from now, I'm also kinda wanting to see if we can do better in capability/longevity than the OTL!Miranda. Hm.
I don't think it's really possible to get better than the over a century (minimum 114 years, from first to last appearance) that the class got in canon, frankly.

It looks like it'd be closer to 200kt. The technical manuals put it at 190kt for the original and 210kt for the refit.
 
We should dust off the old "diplomacy dreadnaught" idea that we have kicked around for a while. Make a huge super tanky luxury diplomacy cruiser.
Dual engineering hulls, dual saucers, four nacelles.

So the choice isn't between a generalist and a heavy warship. The choice is between a medium weight warship that struggles to be anything other than a warship and a large ship that does something really well and is ALSO a highly shielded tank in war.
In the former case, we have more tradeoffs available. We could, for instance, make a medium weight engineering ship that struggles to defend itself.

Our Warp 8 fleet doesn't have a generalist ship yet, and we just did a heavy cruiser.

Well, that's fair then.

But the Excelsior is only twice as long and fractionally wider/taller than the Constitution, so I still doubt it's going to somehow be eleven times more massive unless the newer armour plate is significantly more dense. 3-5 times, maybe.

I don't want the Miranda to exist, period. So damn tired of seeing that ship in every scene.

Well, nothing says that our Project Miranda has to look anything like the OTL version. Heaven knows we're willing to trangress on design principles for the sake of originality (e.g. the NX class and a secondary hull that wouldn't otherwise exist for another couple of decades).

It has a way chonkier profile though. Just look at how much larger the saucer is, especially vs the base Connie.
