Yeah, like, priority one right now is to clear our backlog of stuff we've wanted to do but haven't been able to. Then we can go try to do our Exam while getting our Fiefdom set up. We can't really leave right yet anyway because we need to take an action to figure out how to safely move our stuff.

Because the new count would rather not have a wizard close to her seat of power? She is a neutral party at this point and remaining in Wurtbad would risk antagonizing her, witch hunters, and new spy master. Do you want to make Julia's job difficult by asking her not to report Mathilde's presence in Wurtbad. Her 14 intrigue makes such discover possible after all.
Would the wizard knight's lack of presence in her fief make the count or her witch hunters uncomfortable?
As a noble and major shareholder of the EIC, Matty's got plenty of legitimate reasons to be in Wurtbad even if she's no longer Spymistress; I don't think it'd make things harder on Julia if Matty continued to live there. Plus, she's already well known for use of the shadowsteed spell, so even if Matty is frequently reported to be in Wurtbad, it's possible that Rosy may believe Matty's operating out of her fief anyways.

The way I see it, we should have a Manor, and good defenses--purely because this is basically a relatively safe, out of the way place to build a top class workshop and facility.

I don't think that Magic works like that, where learning X amount of spells results in Matty gaining a point in the Magic stat, or if it does, it hasn't been explicitly stated.

Dwarves, of course, grow crops on literal mountainside that humans swear should be barren.
We might not get anything without pulling in dwarven favor.
Irl the crops that grow in this sort of soil are fibrous, shallow, wide roots.

These are sub-tropical though.

I just... why? Why would you spend these actions building a less cool place to do what we can already do at home?
