Even if he had food, and any food in the wagon would probably have perished by now even if it survived the fall and the rocks and could be extracted from underneath said rocks, he doesn't have any water. At all.

He's dead. What magic would you even suggest to look for him with?

It's reasonable to assume Mathilde already used her Magesight in the search if it was going to help. (Would it? I'm not entirely usre).

As it happens, he never got that far. Here, he was just a very skilled engineer. Someone else will have to wield Grimnir's Axe, if indeed it is ever found at all.

We went over this already. Different Gotrek, he is not a slayer and doesn't have the axe and we already looked for him and we saw the rolls saying he's dead.

As far as mathy is considered he is very dead, she does not know the 'other' Gotrek, so why would she think he is more likely to survive?

As far as the quest goes he is dead unless Boney brings him back.

Also, they're probably slightly hardened to our crazy ideas when we came up with a solution to suddenly not having enough food really easily.

As I mentioned before, whereas I totally believe him to be dead, for decades almost all genres of fiction has been reinforcing the trope "Never give someone/something dead until you see his/her/its corpse" so a lot of people are going to speculate that he may have been saved somehow, even if the roll says that he died.

one day mathilde will actually consciously hear us through some means or another, and on that day she will question everything she knows.

So, we basically still have 2 weeks of food stored in the steam-wagons, as we ate the cows first. So when we make our way back, we can buy more cows.
First thing after reaching civilization, order some potato salad, chicken pie, apple cider and some ranald damned fruits.

They lead an active lifestyle so cholestrol and blood pressure are not supposed to be a problem.

I bet they would require some laxative though...
 
This idea that he's just missing and is finding grimnir's axe is a forlorn and desperate hope. I'd be willing to accept it if boneyM goes there, but it is absolutely not likely.
