We know that the Sun priests fled to the South Pole from the North due to a disaster of some kind.
It could be starbeast and/or void demons, but we know from the Explorer King sidestories that the Jing reached the North Pole with their ship-islands.
So a theory is that the Jing forced the North Pole inhabitants to abandon their land.
The story of the gates could tell us exactly why the Sun priests came to the South Pole.

A major theory is that the north and south poles are basically portalling into each other. Physically, the world is a globe, but if that's true and if the portals are usable, it makes the world a donut from a practical point of view.

From what I've been told, it's a torus. So basically a sphere/spheroid with a hole in the middle.

And so there are jokes that the Destiny Cycle Earth is a donut because well, there are different types. There's a ring torus like the one at the top, a horn torus like the one in the middle, and a spindle torus, like the one below.

The important thing is the topology and how it connects to itself. I don't think anyone is suggesting that the surface literally curves inward. It seems like more of a wormhole or portal at the poles than a physical hole through the center in physical space.
Personally my theory is that whatever is going on at the poles is much messier than merely connecting the two regions of space. There might be an outright breakdown of the concept of geography and physical space with the possibility of traveling from pole to pole being only a side effect.
