The new Escort doesn't have room for a shuttle bay. So it has to resupply through either docking at a starbase, another ship through an airlock, or via transporters.
Naming a Star trek exploration ship after a space shuttle named after a star trek exploration ship is going to give the time cops an aneyrism.
That is to say, the ship in the show was named after the aircraft carrier.
Edit; Since there was no Star Trek in Star Trek, I wonder if the space shuttles were named after some other Sci-Fi franchise.
