One reason I would say getting a thrall is you have absolute loyalty to your family cause of the magic involved in thralls unlike with a hired farmhand.
I mean all the thralls we have seen have been our fathers and not ours directly so who knows.
Like it probably has its own mechanics like owning a farm does that we don't know about cause we didn't own it before.
