But the presence of evil provides an opportunity for further good. What good is charity if no one has need? What good is trust if no one lies? Where is freedom if you are not free to do something besides the objective optimum at all times?
Ah, the "Suffering builds character" argument.
Now, language is a very fuzzy thing, for an example, good is the opposite of bad, but it's also the opposite of evil.
Good and bad are simple concepts, as bad is a thing that you don't want, whilst good is a thing you do want.
Evil is quite ephemeral. For one, it's often used as a synonym for insidious, which is something different. An evil action, I guess, could be defined as doing a bad action on purpose - while knowing it's bad.
Now, human psychology is stupid and incompatible with the modern society, due to various things, including something called the
hedonic treadmill. If everything is good, you will lose the ability to appreciate it, because you have nothing to compare it to. However, that doesn't make bad things good, it just means that you, as an individual are flawed, because you cannot appreciate good things.
To get to your specific examples,
It would be for the best if charity was not needed, even if it eliminates the possibility of being charitable. You can, after all, give gifts to people who have no strict needs.
Trust, truth and lies are neither good nor evil in themselves, so that's a moot point. Now, lying may sometimes be good, or bad, and the same goes for truth and trust. However, they fall more on the order/chaos axis.
Is eating food a good or a bad thing? I'm sure anyone can see several cases where it may be either.
Freedom --- let's not mention free will, but instead the ability in society to do things --- may also be a good or a bad thing. On one hand, taking away the freedom of others can be seen as an evil thing, but on the other hand, the freedom to murder anyone who displeases you is not usually something considered good.
Now, there are ways for freedom as an attribute to be, at the very least, fair, but good and evil do not really come to it.
Subjective things are.
