But what would we gain from doing that? These Not!Italian Balkanites are fiercely independent and will only listen to us until they're strong enough to stand on their own, which they'll begin to do if they become centralized enough. At least with their current setup they'll continue buying our stuff because they can't compete with our economy of scale.

For starters, unlike Styrmyn, Wyrmyn, Kielmyr and Black Sheep their cultures are not Ymaryn-descendant at all, so control will be harder.

I am okay with, like, sphering and some puppets, but it's....third-to-fourth priority.

Basically the issue at this point is that if you wanted to find a "legitimate" king, you could probably throw a dart at a board of Syffryn monarchs, miss and hit a peasant census, and still find some degree of legitimacy. Also, it's a Dual Monarchy but there is only one monarch. So basically you are going to have to choose what sort of thorn in your side it will be since there are no simple solutions to the issue.

If he wanted, it would be as legitimate as pretty much anyone else. Like, pretty much anyone with an interest can contest the decision and have a decent shot at gathering local support to throw out an illegitimate foreign king, which is kind of the problem. Any Wyrmyn king would have zero legitimacy and would need to be propped up by an outside sponsor, which would of course badly hamper their ability to build legitimacy.
 
Probably the same chance of Poetyr making himself the legitimate King of Wyrmyn. The place has not had a proper King in a long time.

It is a huge headache for more than a questionable payout.
We would get rebellious population, lose trust and why?

We have enough resources, and are getting more with Kyberia.
We can get ridiculously huge population as soon as we actually use our farming knowledge on all of our territory.

And Wyrmyn does not even offer us a new port or something unique.
So seriously, what would we be gaining out of it?

Well for an Average ruler he'll be the one who toppled the Hesperanxer Republic without firing a shot. The one who halted the rampage of the Tortun Republic. The One who will (presuming he lives long enough) breaks the Guilds and creates the Constitution whilst The Dual Monarchy rises up from 7th place to a higher number on the Great Power table.

For a monarch with Average stats he's going to gain a reputation for getting shit done.

tbf the diplomatic part is because our Diplomatic Service has centuries of experience in being, probably, the best in Europe. Likely not their first rodeo nor Peter's achievement per se.

Then there's the point of legitimacy we can use. We can push the Paternalist philosophy hard, and then advertise Poetyr and his Dynasty as the best Stewards around. Who's going to pick a nameless nobody over that?
Assuming, of course, that we can beat the Republics and juggle our stats without a crisis.

Tbf, most leaders in history have had average or below average 'stats', even a lot who were considered great.

It's as much circumstance as talent that determines greatness. An excellent administrator, who solves a dozen problems that nobody even knew was an issue might only be remembered as a 'good' King, while an idiot who practically trips his way into kingship at a time when the kingdom seems about to fall, but has good subordinates who manage to save the kingdom, can be considered one of the greatest rulers to ever live.
