I think talking is more appropriate then dancing at this point when we don't know them know yet. We don't want someone to accidentally read too much into us inviting them to a dance then there really is to it. But sure:

The main objective of dancing with Jeyne is the dancing part though, not talking politics. We can talk politics whenever, but this is a unique opportunity to break a bit with courtly protocol and stiffness, especially as the evening drags on and the wine caskets get emptier.We could say that we could just meet them on a cross continent tour about literally anyone in Westeros though. As is it kind of gives away the point, opportunities to meet with Borros are going to usually require special events or visits, which is an issue when we're talking about someone that gets slighted for not being paid attention to. We could just as well say that we'd just meet up with Jeyne on the cross continent tour.
We could just make friends with her when we visit the Vale during the tour though. This is a royal wedding with a multitude of eyes on us of lords and ladies from across the realm. If anything our actions right now are going to be under more scrutiny then they would during a tour. Visiting people as part of a royal tour is the heiress of the realm touring her future realm to pay homage to her principal banner-men and hearing their woes and problems. Preferably she even fixes some of them.
Taking a few cups together to complain about your shitty husband / uncle or dancing with a cousin that you can relate to on a deep level is a wholly different thing and we can't do that in the social setting of a royal tour. We can do it here on the wedding though. So, I want to use this rare opportunity to the fullest.

The eyes are not on us. They are on the king and new queen. We are just a guest here and our only importance is our rank and relation to the married. This is fundamentally different to a royal tour where we act as representatives of the crown in everything we do.
