And the reason that they didn't invite her in the original story was because one of the golden plates for the banquet had been broken, and rather than insult her by giving her a pewter plate to eat from instead, they elected to not invite her. Merriweather basically made it absolutely impossible for them to save face for themselves and Maleficent both, ensuring the curse was laid. If she hadn't spoken up and the King had been able to explain the situation it's entirely possible that she would have instead let Flora grant her gift, and then trumped all three of the Good Fairies with her own gift as a flex.
