I'd say option 1, but I like the element of chance. Plus, there would be a lot of fierce debates on what animal we would uplift otherwise, and those can be both annoying and fun.
 
Oh! Forgot to mention. Your species choices for Option 1 are limited to house cat, dog, pigeon, and raccoon.
Hm, no crows? That seems like it could be possible, BB should have some flying about, and a crow would be a great pick for a witch.

Story wise, would option 1 be, she stumbles over an animal (possibly hurt), and uses the spell on it? or is it more that she puts some though into it, and decides a common animal would be the easiest to hide?

Edit: If we get an eyepatch and crow/raven familiar, could we be Magical Pirate Odin?

I would assume that a cat familiar can't fly in normal form though, which would be a benefit for infiltration. Not that I would mind a cat familiar, I was just was curious on the method behind how we pick the familiar in option 1.
Remember that our familiar will have a normal form, a human form, and a combat form. We aren't necessarily limited to mundane traits.

Option 1 is that she grabs the first alive but injured animal she finds and turns it into a GB, hence the limited selection.
Option 2, because reasons.
But what reasons? I don't just want people saying "Oh, I want this one!" Why do you like one more, what do you have planned if you want Option 2, etc.

Option 2 because I like the idea of Taylor needing to put thought and effort into what she wants and why she wants it.

Option 2. If the Guardian Beast is to be her friend and companion, it shouldn't be left to chance.
 
OPTION 1. Get a random Guardian Beast now now now. I will roll dice for species, age, gender, and powers, but you'll have one by the time Arc 2 starts. Because there will be so much randomness, I will also give the GB's powers a boost. Do you want the chance to get a motherly catgirl who is nigh invulnerable so you can have your own Siberian? This is the only way that will happen, but there's only a 1 in 192 chance you'll get her. You might wind up getting another ranged fighter, instead, which would accentuate your weaknesses rather than cover them.

I like this one, strength AND variety.

If we are going to get a Guardian Beast i think you should take a page from Gameverse/ Game Theory on how familiars work in that. Our familiar should help balance Taylor by covering her weakspots. Which in this case would be close quarter fighting and defenses as well as helping with her more pressing emotional issues. Those being caused by her lack of friends or loyal companionship.

Naming her after her fathers gang seems abit short sighted and kind of out of theme for her personal character.

Option 2 does provide more variety. On the other hand, I doubt we'll be disappointed by a guardian beast anyway. More power is nice, as I said. On the other hand... Morrigan (or something like it), or a raven GB. Or a tiger GB. Maybe a boar?

... Damn, can't decide. A pigeon is just so... I don't like pigeons. A cat might work, though.
