The first will likely find a healthy mix of all the major gods, nobody specifically dedicate to common work though.

R'hlor is too generalist... Maybe one of the Valyrian 14? We've seen but 4 afaik - Syrax, Meraxes, Balerion with [Law], and... someone else for [Death]?
My point being, we haven't seen much of them.
There are still a few gods (ASoiaF-canonical and otherwise) we haven't interacted much with - and unlike Meraxes or Syrax (whom we can't afford to rezz because the 15th), those just... flew under the radar, really.
The Drunken God and the Blind God of Lorath are the first to jump out, (possibly) Eldritch-flavored Black Goat next.
There are lots of more minor deities we can assume existing otherwise, what with Braavos' Isle of Gods, and such.
They probably just don't interact with mortals/have many interests on PoB/have ability to operate on PoB.
