if we don't want to risk the rider being targeted, then we make an intelligent brain symbiote, we can use the creatures the Illithids used on those Ironborn children as a template, give such a creature intelligence, and let it command the Anaconda, if it grow tired of that, we just grow it a soul less body to inhabit.
We can even give the rider some spellcasting, having a few buffs would improve the Anaconda significantly.

There are plenty of sentient base creatures we can use, which become acceptably intelligent when the Advanced template is applied.

I have been thinking more constricting, first I worked on giant squids, but we gave up on that, so now I'm working on Colossal snakes, but I don't know how to make them intelligent, without making them too high CR.Ahh okay that makes sense. Something big with capsize. Maybe an underwater dinosaur type creature?

Mostly because constricting mean that after the ship is dragged underoil, it wont sink, which mean the loot wont be lost.Why constricting? If the ship sinks then does it really matter how?
