It's just good sense to be polite under almost any circumstances where we are meeting with and interacting with a Power on Mab's level, especially one we can't fight on at least roughly even footing.
Being polite costs us nothing, after all, and the better we handle this situation the less likelihood that Harry will come out of it worse than he went into it. What's the point of having an Etiquette skill if we aren't going to use it when it actually matters? It really, really matters in this situation, ya'll.

Still thinking over a stunt. But we should definitely use the excellency here, first impressions are important. I'm using IPM in the polite greeting here because I want to make a point that we're doing whatever counts as polite here because we chose to, not because she cowed us into it.
I'd also really like to be immune to mental effects for the rest of this scene.

A small bow of the head is hardly kowtowing to Mab. If nothing else, it's a sign of respect, not for the woman herself but for the awesome, world-shattering power she wields and the sway she holds over Harry's continued wellbeing.
Only when he wants to be. Odin swaps Mantles as he desires, and unless he's wearing the Winter King Mantle, he isn't under Mab's hierarchy at all. Even when he is Winter King, he's not her direct subordinate.
