The durlans have basically been playing live action Fallout since the 6 minute war, they nuked their genome to hell and back.
Guess where the only known copy of the original durlan genome is? The techno Durlans are interested in Earth because they want that DNA (or equivalent) so much their tentacles quiver.
That unaltered DNA basically has religious significance to modern durlans. I don't know if there is any practical difference between classic and new flavors of durlan though.

I suspect the reasonable responses had a lot to do with Paul having a reasonable authority-figure response to their grievances. It's amazing how rare authority figures who aren't jerking you around and, upon giving some pap of "I think you have good goals" will follow up with "but there's nothing I can do." Instead, Paul said, "I agree with your goals, and while I have other priorities now, if you'll demonstrate that you have a plan that will have long-term viability, I will be happy to put you on the priority list as soon as we have our first major project out of the metaphorical dry dock."
My guess would be that "unstable biology" wasn't about creating any sort of gender identity political statement, but an excuse for shapeshifting ability. "Stealth" is a fine name for a shapeshifting spy.

People Are making too much of a big deal of her shape shifting she had a grand total of three shape shifting feats under her belt.
1- transformed when she went into labor
2- her powers chose to have her son take after his father rather than expressing hybrid traits
3- transformed as a defensive measure when someone stole her precious bodily fluids.
As for her gender identity, for all practical purposes she was born a female, lived a female, died a female. My interpretation of "neither male or female, unstable biology" is that like many lifeforms on Earth, her gender wasn't locked, a flood of hormones and she'd be a fully functioning outie instead of an innie. Just like in Jurassic Park thanks to using the DNA of the wrong frog.
As for why she's called Stealth, it's because her mutant power to generate a field of "I'm a ninja, bitch!" As in she laughs at infrared sensors, sonar, radar, etc, she's the biological equivalent of a stealth bomber.

Depending on how old the character is in real-world "when she was written" terms, this might be a "hilarious in hindsight" or "funny aneurism moment" type deal.
i.e., the "on the nose" bit might be coincidental and demonstrably so by predating the common alternate usage of the term which MAKES it on the nose.
No idea if that's the case, mind. Just a possibility.
