This seems like the most overall useful option...
[X] Halfdead [Dog] : The dogs are small, compared to the shepherd dogs of Europe, with long noses. However, they are strangely strong and enduring, able to run for an entire day and throw on his back a full grown man. The dogs are stronger and more endurant than dogs of their size should be able to be.
 
[X] Spiritteeths [Dog] : The teeths of those dogs are sharp, and cut deep. More importantly, when one of them tried to bite the ankle of one of the Blade, I felt pain from the bond I share with them… The dogs have sharp teeths that can harm supernatural beings.

I want tanky doggos so that they can last many winters.
 
We know they have things that at least resemble dogs, or fulfill a similar role, but no further details than that.

I made the speculation that they might have some of the unique dog breeds or at least similar capabilities (maybe even all of them, that seems like it'd be very helpful to how they survive despite not having any real permanent shelter as far as we can tell), with Halfdeads sounding the most likely since it resembles how the Shepherds and their animals were described, but that is just speculation.

The Sheperds have wolves, not dogs. More like wargs. Some with eyes of men.

While they cannot be ridden we could make sledges or carts for them to pull. As the town expands we're going to need pack animals and we're not going to have much option other than trade with Europeans which is not reliable. We have means we can work towards for fighting and detecting the supernatural, but not another sure source of pack animals.

I do think that being able to detect supernatural stuff, and then learning the difference between friendly supernatural and unknown/enemy supernatural is the most useful option for us.
We'll have to give them lots of scritches and cuddles to help them get used to our ghostly comrades!

Fair but gonna ask what does Alexandre and old sea dog jones look like cause i want to find a image for then.
Alexandre : Tall and thin, with unruly black hair and brown eyes. He has very pale skin, like someone who rarely sees the sun. He wears the robes and cap of a scholar.
He looks deeply unhealthy, like someone who barely survived a terrible fever, and his hands constantly move, like someone so accustomed of holding a book or writing that he forgot how to simply stand still.

Old sea dog jones : An old man with a bent back, skin tanned and dried by the winds of the sea, hair bleached by salt. His eyes are small and set deep in his face, and the palest of blue. His nose is a big, formless thing, broken too many times, and he lost the upper half of his left ear.
He tend to wear old sailors' clothes, and constlanly hold a battered boarding axe.

Having dogs act as an early warning for the supernatural while out with Hunters on expeditions sound very valuable to have.

Ghostnose Dogs sound like they'll suffer in a town full of Ghosts, but that sensor ability is too good to pass.
