Tactically unsound, but Yumi just straight up telling someone who wants to fight her that she's immune to their entire arsenal seems funny to me.

Please help me build a better Nahobino. I have no idea what I'm doing.
When it comes to SMTV, the general rule of SMT games applies: Put most of your points into your main attacking stat, plus a few into Agility so you don't miss (and you can skip the second part because SMT applies all but one of your stat points randomly, meaning your Agility will wind up high enough on its own).

As for skills, the Nahobino is pretty much guaranteed to be your heaviest hitter at all times, so you'll want to go heavy on offense. If you're going for a Strength build, Murakumo remains arguably your best option, especially when combined with passives that boost crit-rate and crit-damage, although some of the new Nahobino-exclusives are pretty powerful in their own right (with that said, they require setup). If you're going for a Magic build, that requires a bit more thought, since then comes the question of whether you want a flexible-but-less-optimized build that can handle most situations or you want to switch up your build to deal with whatever happens to be in your way next. SMTV in general subscribes to the notion that Bosses With No Weaknesses Are Bullshit (with a few exceptions, most of which are DLC), so you don't strictly need Almighty to make a Magic build work (although it certainly helps), but with that said, Vengeance introduced a new Nahobino-exclusive called Heavenly Ikuyumi which runs off the Magic stat and can actually compete with a Strength!Nahobino's Murakumo with enough setup, especially if you bring something that lets Magic crit without Omagatoki: Critical.

For resistances, as you might expect, the Demifiend's Essence is pretty much impossible to top, but aside from that, it usually comes down to what Boss you're about to fight, although as a general rule, you want to avoid being weak to Light and Dark (this is especially important in the endgame).

This is all the advice I feel comfortable giving because I haven't been watching your streams (I don't use Twitch in general), so I don't know where exactly you are or what route you're going down.

Like, I have no idea how to "properly" fight them. Is there some optimal strategy I need to employ? Do I need to rework my build to get through this fight? Do stats actually have an effect over 100?

What do I do?
 
What are they doing specifically to kill you?

Cause all I can say is to try and build a team designed specifically to counter a single Superboss.
Shiva just summons all of his pals every turn, but when I actually take them out, he gets pissy and slams Almighty. Anata (the snake) heals him to full every time I deal damage. My team just gets wiped every turn so I have to summon other guys, then it's Taranza (or whatever) time

"But...!" Ares's shoulders slump, "...I guess it can't be helped. Whatever." He drags his feet as he makes his exit. "...Stupid humans, needing sleep...!"

You sigh, putting your hand to your forehead. If he stuck around, you might've gotten a headache...!

"Hey, Yumi!" Shoji waves at you as he descends the staircase, "Sorry I took so long, I was just grabbing some stuff. Wanna head home?"

"Yes." You plainly state, "Let today be done...!"

Shoji eyes you strangely, "...Wow, you're that tired? Me too. Hopefully tomorrow isn't a clusterf--?"

"Don't jinx it, please." You lead him over to the Terminal, "Let's just go back home, sleep, and worry about stuff in the morning."

"Hard to argue with that." Shoji says, reaching out to the Terminal...

Note: Slashing with a spear is actually a valid tactic, even if it isn't as damaging as a full stab. Pulling from this page on TV Tropes;
Justified with Lancer in Fate/stay night. The game goes out of its way to point out that swinging a spear actually is a perfectly valid and effective technique; it covers more area than a thrust and is therefore harder to avoid, and even if the tip of the spear doesn't draw blood the shaft is still swung with enough force to break a rib.
Several Chinese martial arts teach sweeps and overhead slashes for spears. Many of these are carried over from staff routines and the shaft of a spear can bludgeon opponents as well as a staff. Likewise with European spear fighting: though spears are primarily used for thrusting, the European schools of martial arts still included strikes with the shaft and cuts with the edge of the spearhead.
