Cowboys obsession is less specialized for animal husbandry than , you know, animal husbandry obsession but should also include mounted combat (to go with the daemon steeds) and gunslining.

The locals have actually achieved a sort of symbiosis with the creature, breaking down the things it swallows into more useful chunks and hunting the seemingly infinite supply of parasites within its body.

I'm picturing these marines prowling the insides of their host for invaders on Symbiotes that would only grow to a 'mere' three or four feet long if they weren't inside of a planet-sized daemonic beast in the middle of the Eye of Terror. They could hunt down anyone who invades before feeding their remains to the (likely man-eating) cattle entrusted to their protection. Their home is most likely mobile as well, and if they're able to figure out how to direct the beast's migrations, they will have a Planet-sized battle station, once they mount a few Gellar-fielded turrets on the outside of its flesh.

Well, here's hoping you guys can come up with a better name for this warband cause rough riders and bucking broncos are gonna be hard to beat.
