Letting someone who is less boorish than Therese address Mainz sounds like a good idea. And we don't really need Chamans to inspect the army yet another time.
 
What if we let part of his army cross the river, use artillery to take out the bridge, trapping them on our side, and then have our artillery focus on counter battery fire? If we sally forth with cavalry and infantry we'll have the numbers advantage, and their artillery will have to choose between trying to support their troops and fighting back against our artillery. If we don't sally forth, part of their army will be trapped on our side of the river, cut off from supplies and unable to take the city because of not having enough troops. Then we can have our cannons take pot shots at them whenever they aren't doing counter battery fire, and have our cavalry come out to harass them occasionally.

It's nice in theory, and we can pull it through we definitely should, but it requires the enemy to commit a serious blunder for that to happen. Sore Loser is supposed to be better than that.
