What bits of Ritsuka's personality and such are from Shirou & Rin and what bits of Kana's personality are from Shirou & Rin as well?

And how wealthy are Rin & Shirou here? Like is Rin now less of a penny pincher with both a larger income & Shirou's income and trust fund to add to the Tohsaka's assets?

It's difficult to answer the first question, because while they are very much their parents' children Ritsuka and Kana are also their own people. The aspects I can most definitely point out, however, are that Kana has her mother's evil. Ritsuka has his father's charisma, and the both of them have Rin's snark and Shirou's talent for sick burns.

They get by well enough. Shirou's trust fund and lawyer work provide nicely for the family, supplemented by Tohsaka patents and reacquiring some of the land Kotomine mismanaged, but on the other hand Rin requires a lot of resources for her research on the Jeweled Sword, the family now has three users of gemstone magecraft to worry about (even if Kana doesn't use that many gemstones), and Rin being Rin she winds up losing a fuckton of money every so often due to bad luck and clumsy mistakes. Also they have to feed Saber, so.

All in all they get by, but Shirou tends to accept hunting contracts right before holiday season so that the family can afford to travel.

Are we sure EMIYA got the raw end of the deal with his enslavement to the Manifestation of Makind's will to survive?

And finally, how well acquainted are Kana & Ritsuka with Luvia? I remember she helped get them into Chaldea so what is their relationship with her like? She's sort of an aunt IIRC?

Kana also has the Sword Element, yes. This has badly crippled her ability to use Magecraft, though as a matter of course she's still better than Shirou.

The family also largely resides in the Emiya residence, though there have been additions made. There's a basement now, for instance, to serve as Rin's workshop. Because she doesn't want to use Shirou's stupid shed. They clean the Tohsaka mansion fairly frequently, though.

The twins are on reasonable terms with Luvia, enough to know who she is and for her to introduce them to and get them involved with Chaldea - mostly to troll Rin, since she knows Rin is against them joining despite very extremely technically being part of Chaldea - though I guess a better term would be partner. She's not really an aunt, though.

I know that's Shirou and/ or Rin probably wouldn't allowed it, but now I imagine that on holiday season, Emiyas usually makes their travel on... more exotic places.

As amusing as that is, Shirou probably stays well away from such places - they're prime territory for Moonlit Shenanigans.
He probably goes to such areas by himself though.

I do hope Rin isn't the one trying to find ways to squeeze every penny, by suggesting weird ideas such as stowing away on fishing boats, or joining low-cost tours and ditching partway through as "travel plans" for the family. :D

Ahh so she isn't like a godrelative to Ritsuka & Kana? Will we ever get to see their introduction to her? :D

Does Luvia still hold a bit of a torch for Shirou, considering that was also partially a reason for her & Rin's rivalry?

Out-universe, we know that. In-universe, at least when Rin & Luvia were at the Clock Tower, we never saw any indication either knew a connection.

The older Edelfelt sister went back to Finland claiming fhe Tohsakas defrauded others and it seems the Edelfelts believe the younger Edelfelt died during the war.

There really isn't much of a reason then to visit the island, even in a joke.
Considering what happened there, good chance Clocktower would spare no expense on clearing the island from the face of earth. Literally.

I could totally see her encouraging the two to call her Aunt Luvia just to piss Rin off :D
