I would much prefer recruiting Dooku as our sith apprentice personal badass. He's a savvy political actor so he could pull double duty as political hatchet man and executioner.

I do wonder about this, as Palpatine's worse condition after fighting Plagueis might have made it infeasible to recruit Dooku without getting ganked.
