If we fully understand what moisture farming entails, be it moisture vaporators, defence against Tusken Raiders and so on, we could help improve Cliegg's farm to the point where they should be fine without us.
Even make it safer.

My point is, I don't want anything to do with gambling particularly on a planet like Tatooine. This just puts us and our family easily on the radar of some unpleasant people.

I want to spend time with C-3PO on the chance, that it furthers our droid skills and lets us improve him.
There's even a chance, that he could teach us some language/form of communication.
As a protocol droid specializing in human and cyborg communications, C-3PO could speak six million different forms of communication, including Ewokese.

They're mostly fine? Cooking, Music and the Artistic Skill are kinda strange since they feel like they should be specializations, or things learnt because we want to? As for suggestions Acrobatics( jumps, climbing, flexibility) with Athletics being how fast and for how long we can swim/run/fight? Diplomacy, maybe? I mean it depends how in depth you wanna go with them but as a general idea, they're fine as they are.
 
Math and Science could probably be rolled together. Science should probably have a bunch of specializations.

The problem with the Obi-wan / Maul and Qui-Gon Jinn sheets is the formatting of the text at the start of the Spoilers. Unless you space it out ( a new line ), the formatting 'merges' with the spoiler 'code', causing the partitioning problems you experienced. You're probably seeing spoiler code in bold or underlined or coloured or a combination of such along with multiple empty spoiler 'codes'.
