I don't think people need to ask my favorite, but I think my least favorite is probably Saber Lancelot's, if only because I can't take it seriously in the slightest. The background is good and I like the little Arturia, but Lancelot's dumbass smile just gets me.
Funnily enough, i feel the same for Tamamo.
Bigger-than-head tits just make entire art silly.
Dunno about favorite, but least favorite is probably one of the lazy ones like Enkidu or Ozymandias. Or Merlin, who looks like a different artist altogether did his final art.

Oh, yeah, that too. Tamamo's bust size being so inconsistent is just kinda hilarious to me. Transformation's a hell of a skill.
Merlin's final art is good but it is a little different to the others. Enkidu and Ozzy definitely have extraordinarily lazy ascensions though. They're not bad, just lazy. I expect it of Nakahara at this point, but Morii did really well with Tristan so I'm a little disappointed with Enkidu's.

I'm going to assume 'that you own' for sanity's sake.
Best goes to Asterion even though I don't like his Stage 3 design (suddenly double-size red horns and hair fit to make Stage 3 Herc blush) because it sums up his character extremely succinctly. Big dumb fluff in a field of flowers being bewildered by nature.
Close second is EMIYA because seeing that smile mamoru'd makes my heart go doki doki. And I like how the background evokes the cool cloudy-mirror-dimension ufotable has used for a couple of Fate things.
I almost gave 'least' to Mozart because his Ascended designs are just so W H A T but I can't in good conscience pass up Saber Alter. Because god damn. Saber Alter should not be sitting in the snow before me, dressed in a gothic lolita dress, giving me the Christmas fuck-eyes.
Close second is probably Enkidu because his Ascensions are impossibly fucking bland and I have no earthly idea what he's got to do with lightning.

My favourites would be a tossup between Arash's because of personal biases and also because it's just kinda serene and I like that, Sad Vlad's because it shows a part of his character that's rarely on display, and Enkidu's because even though their ascensions are bland, their final one does do a lot to display the power they have available to them.
As for least favourites. Just out of the Servants I have, Shuten would probably take the cake and soak it in liquor because it's even harder than usual to ignore all the glaringly wrong things about her design in that ascension.
Out of the Servants I don't have, Scathach takes it for both looking like a lost child and my own personal biases.

I kinda like Cu Alter's Final Ascension Art. Maybe I'm biased, but the way he just lounges around like he's letting you admire the view is... Well, I like it.
Least favourite? I'm going to automatically discount everyone who had bad designs from the get go, and say Karna.

What expression even is that? Is that a smile? What kind of smile is that? What kind of angle are we looking at him from?
It's just... Gah, you would've thought someone like Karna would have had a better final ascension artwork.

My least favorite among the ones that I own and started good would be Mordred's cause it took a good design from stage 2 and goes completely to shit. Favorite is hard to say but I do like Billy's final art.

I kind of assumed it was meant to reference his ascension to being a god or something, which is why it sorta looks like he's rising up?
Its not that hard posthumously to acquire a bit of divinity in your legend by being associated with a god a la Atilla or Iskander. In life, ehhh. You could achieve enlightenment like Bhudda, I suppose. Even if you managed to kill a diety and consume its blood, I somehow doubt it alone is enough to become divine.
