It's a bit of a stretch, but these guys seem to know much about hunters, seeing as they often work with them and aided in the creation of an artificial one. That and they'd most likely know about the metaphysical quantum BS that may surround them, which could include Gehrman.

1) Gehrman wants out

2) Gehrman's intel on his situation seems to be limited to his role in working with new Hunters

3) Anderson really doesn't know anything about the guy or his history, and he so far has shown an extreme reluctance to ask either Gehrman or Hope about said backstory.

An outside perspective of what Gehrman actually is will help a lot with 1 and 3, while covering a gap in knowledge that comes as a result of 2.

I understand the motivation for asking them (i.e. what we hope to get out of it) and the the fact that they may know something (on account of knowing a lot about hunters) - it's just that it seems like we're relying too much on metaknowledge to know that we should even ask the question.

Maybe we could ask why the church forbids the contract - seeing as they went to all that effort with the Bloody Crow and now he's gone for good - whereas otherwise he'd show up again later to wreck some shit. From there segue into asking about the Dream itself and Gehrman by proxy?

Or swap around the order to Laurence/Willem first and hope that Gehrman gets namedropped (Gehrman has mentioned Laurence's Designs before, but never Laurence in a personal capacity as someone he knew)?

Or maybe I'm overreacting and there doesn't need to be some convoluted justification for asking the question.

Being forcibly Dimension hopped is as good an excuse to ask whatever comes to mind as anything.
 
...on a related note.

We were all wrong about Ludwig. He has yet to appear in Bloodborne. He's going to show up in the DLC as a boss.
