Also, if we go with Canon Levels of magic, and go with Jaime, maybe Cersei can be the Witch/Mage to our Knight? She could pick up a couple thing from Maggy The Frog, like Divination, or even possibly Elemental Control for fire. Hell, Glamours would be useful to the extreme.
So? If it changes nothing for you without devoting things to it 100%, why cut out the option when it can be interesting when used against us? That kind of thinking makes no sense to me.
If you want to cut out magic entirely then why not just play a medieval Europe quest? As there are many more characters throughout history who are just as interesting as the characters in ASOIAF.

It depends I suppose on what you want to do in the setting. If you want just political intrigue then yeah I suppose you could do it without the magic. But, then that is all it would be. The White Walkers would not exist so there goes that. If they do not exist would the Wall exist? Personally, I like High Magic as it just adds another depth of mystery and an almost child like wonder to the setting. It also adds more dangers and a multitude of sticky situations for our would be protagonist to be caught up in.Why give our enemies the use of magic when we won't likely have in order to make them more interesting? They will be interesting enough as it is. Never understood people's insistence on making our enemies more powerful through shit like this. I trust the GM will make it interesting enough as it is.This is westeros so nothing is really going to be easy.

That is unless people are voting to introduce high magic or something. That i would have less of a problem with because even that would be preferable to canon.

Samwell can be a knight, if we choose to make him a knight. Honestly, for Samwell, it was less that he wasn't a martial prodigy and more that he had no martial ability whatsoever and was a craven, neither of which i think any of us are interested in playing.
Jaime was, in fact, a suitable heir for Tywin, even if he probably fails a few of his expectations, but honestly, his expectations are ludicrous. As long as we don't get conscripted into the KG there, we'll be fine.
Loras might not turn out homosexual, though I'd like to try and swing him to being at least bi, if only to keep a bit of his character intact.

And Bronn, as you said, is a mercenary. Low standing, very little wealth or resources and we'll probably be resigned to traveling and fighting and fighting and fighting until we get enough money to leverage our self a position or maybe start a business. Honestly, Bronn probably has less freedom, because we'll be stuck on a purely martial path with almost no politics or intrigue for a good long while.
And the fact that you mentioned changing Loras's sexuality just to give the players more agency is insulting. Loras is gay. End of the matter. If you don't want to play a character that is widely going to be ostracized, shunned, and attacked for a critical component of his person if it is made public, then you shouldn't pick the gay character in a medieval setting that depicts it as one of the great sins a person can commit.
