Probably not a dragon, the most pragmatic option might be going with no heraldry at all, but that's also the boring option, and since we're doing something so daring, might as well do it with some flair.
I would personally like the Arryn falcon, or maybe Alicent and Gwayne would give leave for the Hightower sigil, or maybe Raylon wouldn't mind the Tarly sigil.

Could just go with colors just some standard pattern with something close to an Arryn Blue and a Targaryen Red. (IE not a lie but not screaming who we are)

I'd say no dragons, because that makes it either really obvious or very disrespectful.
For something related to our goal of knighthood I'd propose the seven pointed star, since knighthood is tied to the religion. If we want to do a Valyrian reference, how about fourteen fires in reference to the fourteen flames of Valyria.
