So it seems that Galadriel can just naturally knock down fortresses. We really should make extra sure to stay on her good side.

The Balrogs have wings but they are vestigial as their corruption grounded them. Thematically Morgoth seems to have not many winged servants with winged dragons taking most the First Age to create. Also the fact that the huge demons could fly would have mentioned at some point in the Silmarillion as it would have totally kept any elven army from victory.
As for your chances against the Witch King. Let's say Minas Morgul is for him what Lorien is for Galadriel. All descriptions of the Vale imply the place is tainted with some subtler and more frightnening brand of evil than Mordor itself. (Frodo and Sam have no problems walking in Mordor, Gandalf and Aragorn reactions to "try to take Minas Morgul after the Witch-King death is a great nope).

... dark level ages propaganda is in many ways easier though. No tv, no radio, no telephones, etc, you aren't going to have some goober take a picture of the Witch King on his throne and tweet it and whoops secret's out. The guy is kinda reclusive, his immediate inner circle are all in on it, and bam, there ya go.

The Witch King managed to rule Angmar without problems and we know from canon men served him. Also while no fair the Nazguls are able to clad themselves in auras of dark majesty imposing their will around them. Let the benefits of managing huge empires for centuries and having well the time to seed them with convenient legends and many people are not even aware the kings returned are wraiths.
