So on summons. You will need to explore this in character but the 3E Summon elemental fluff applies.
You can summon "demons" but they are more Essence given shape and form than actual characters.
Currentlh only 3rd circle devas of The Endless Desert and SHLIHN applies.
Thr Primarches are more than just genetics. They are as much a warp God, if a Minor one, incarnated in flesh, as they are gene forged superhuman.
But with Sorcery? Yes.

How much will the jug stretch our water supplies? Also, can we imitate others into Sorcery? Because if this is based on M20 I want access to Greater Rituals and those require multiple practitioners.

Yes, it is very much possible to initiate others into Sorcery, but keep in mind that they are not Exalted, nor are they a Primarch. More on this, if you decide to take students in the game. There are ways to make it safer but mortals run the risk of corruption regardless.
Also unlike you and the Primarches, mortals have to buy Sorcery all the way to 5 dots and do not get the 5th Dot without a Wish or a deal. VEE fodder basically. You will need to be creative to make the cost cheaper for them as it costs them path rating x7.
As for the jug, it can supply water for a party of 4 - 5 people if you stretch it but not more else.
Don't worry though, you have options next turn as this is the last Char Gen chapter.

Can the spirits teach Ephemera? It seems more useful when working with non-malicious beings.

I did consider that and ultimately? 30k so it would not work out. So I buffed Summoning a bit by making summons instant to compensate. Most "spirits" are hostile anyway and you can summon friendly ones with Summoning so it seemed superflous.
That said, even otherwise, the spirits know about weather manipulation, by virtue of being Worldspirit remnants. They would not know how to summon as they do not do that.
I really don't like that it makes elementals basically useless. As you cannot call on the strong, or learned elementals, they wind up good for mass minion spam and that it.
Is their a list somewhere about which 3rd circle corespond to the which yozi.

A way to avoid Aggravated damage yes please. Between infernal regen, and soak mere lethal damage will just not be enough. Also the entire planet is a desert, and ships, cities and the like are considered places of desolation.

I assume we're not accepting fan-demons? Also, do we need to unlock a Yozi to access its demons or is it just that those are the ones we automatically know the rites for?
Potentially useful as steeds and guards.
Very useful source of occult knowledge. Possibly including the rites to summon other useful demons such as Stomach Bottle Bugs, Fervid Smiths, Quickeners of Ores or Hopping Puppeteers.
As an aside though, having found a copy of Sorcery, hedge magic really seems, both thematically and in terms of scope, more in line with thaumaturgy than sorcery. Although I suppose as an Exalted we might overcome the 5 dot limit on the attributes.

I am willing but part of the reason is to prevent bloat. It was part of why I restricted Caste and Favored Yozi at E1 and why you unlock one Yozi each time you raise Essence. As for unlocking Yozi, yeah, if you unlock the Yozi, you unlock the demons/devas as well.
They only know what you know. You are not summoning the actual demons but rather shaping your Essence as a new Demon that exist for a time before fading away. Similar to 3E Summon Elemental.

So summoning any kind of demon for anything other than brute labor is basically pointless since they won't have any skills we don't have, and we don't have most of the skills needed to make their innate abilities actually useful?

Not quite. As an Infernal you have a gigantic past life rating and have been drawing on it. I have reworked it a but but sufficient to say, between Past lives and Primordial Fetch death, the demons will have the dots, even if you do not.
It is only the Sorcery stuff except Workings that you cannot rely on past lives, due reasons I can't go into. So if you want to make Moonsilver or Warstriders or anything else? It works. Sorcery? No.
