@Itaywex, two questions:
1) Are we able to use fire breath while transformed?
2) Are there any demons or such reputed to have fire breath, or something sufficiently similar?

If yes to both, I have a cunning plan:
  • Pretend to be a giant demon, show up, romp and stomp the place.
  • Maintain the demonic guise in all outwards-facing operations.
  • Laugh uproariously when the scrubs turn up with anti-demon shite instead of anti-dragon shite!

No. You might be able to achieve a similar effect if/once you learn magic. But right now you can't do it.

There are, but you haven't encountered them, nor will you be able to use any magical abilities they might possess (including fire breath).

However, if you do want to attack somewhere as a monster you can, but it will have to rely on brute force and not a creature with magical abilities (You can transform into a minotaur, an ogre, a dire wolf and most humanoids and animals. I'm fine with you transforming into another relatively common monster, just ask me if you think of a form you want to transform into.)

-[x] Approach it in the form of a bird, then alight somewhere relatively nearby, and change unseen into the form of a small emaciated girl-child, with long, tangled black hair, dirty and bedraggled hair, and a faintly unsettling cast to her features.
--[X] Stumble, seemingly dazed, towards the buildings surrounding the mines, until someone approaches you. Tell them in a weak voice, that you are so hungry, and have not eaten human food in so long.
---[X] If someone offers you food, or otherwise at some appropriate, amusing or necessary juncture, turn into as enormous a wolf-creature as you can, and tear them apart, giggling in a high-pitched fashion all the while.


That will keep 'em guessing.

We probably don't want to collapse the entrance, one of the first things any mine does even before they get to mining is making a second passageway in case of the collapse of the main one, if only for air to get through.

-[X] Wander into town and use your disguise to engage in casual conversation with the locals.
-[X] Use said casual conversation to learn more about the kingdom, its allies, and its enemies.
-[X] Once you've successfully gathered all the intel you can from this pitiful settlement, leave, then come back later and attack the place then.

You'd be surprised just how valuable salt is to a civilization that cannot afford or does not have the infrastructure for mass refrigeration.

We absolutely do. People being able to get into the mine easily would eliminate most of a dragon's natural advantages in combat, making this far harder than it needs to be to clear the whole site.

We're not trying to lock them in. We're trying to lock them out here with us.
 
@Itaywex as a general question will we be dealing with any metal dragons?
By "metal dragons" you mean the metal races of dragons (which are usually the "good" dragons) of the standard D&D setting, right?

And while I don't rule the possibility of gold/bronze/etc types of dragons, they won't be the classic "good dragons" who spend most of their days in human form while searching for evil to vanquish. For various reasons related to the setting I don't think that these types of dragons will work well here.

You will probably encounter other dragons. How and when, that will depend on your actions. I can say that I do have some scenarios in mind.
