Very few paths have been outright closed to you. You're going to struggle if your goal is to maintain the empire. You're also going to struggle if your goal is redemption. It's going to take some choices that are personally painful for Vader and some failures to lead to a state that could possibly be called 'redeemed'. Questers are *bad* at deliberately making bad choices to make the main PC fail, so... redemption is unlikely.
That being said, it's possible to be reunited with Padmé in this path! She's probably not going to be happy with the path you take to get there, but it's doable! Haha. Hahaha.

2. No. Anikin is gone. It's possible to get rid of Vader too. But the young boy is gone, the young man is gone. You can be something new, but you can't go back.
Going back, regressing in your life progress, is like pouring water from a filled larger jug into a smaller one and expecting it all to fit in the smaller one.

So still an empire, but an Empire where when people can't agree on stuff Vader makes them agree on stuff and he's more free to have fun using his mind to crush the tracheas of all the incompetent corrupt screwups.
I don't want to be exact yet because there's so much supplementary material and the years between Episode III and Episode IV a new hope are so packed with stuff happening. Ironically the path most likely to go 'grey' was the Betrayal path in my mind, as that version of Vader is still driven by positive emotions he had towards Sheev Palpatine. Those emotions having turned into anger and rage.Darth Vader shall be gone, Anakin is Gone - but what remains is one experienced in the Dark and Light (no Grey BS), one that fights well, and one that's freed from the Obligations of both orders.
