How does a bankai actually break? It seems more like an energy/release state, and a bunch that I have seen have their weapons transform into states of energy or other such things.

Shikai is borrowing some of the zanpakuto spirit's power. Bankai is dragging out the entire actual spirit, the reverse of going into one's own inner world. If you break a Shikai, you're not breaking the zanpakuto spirit itself, but if you break a Bankai, you are.

The point is that we don't know. The entirety of the Thousand Year Blood War was rushed beyond all belief, to the point where it'd be better if we'd just had like four chapters of the epilogue and none of the quincy/royal guard/soul king shit.
