Actually killed might be difficult, but 'Mission Killed' seems fairly simple to do. And thus capturing her and having her end up as a weapon for the other side isn't a big deal.

Totally understandable! I guess a possible avenue to alleviate that concern is magic? I mean Sidonia is sci-fi to the max with clones, photosynthesizing humans, spontaneous gender fluidity, and deaths via gravity and the Kabi are about as mystical and mysterious as things get with their 'Artifact' origin. Magic is a huge hole in her repertoire and experience.

How alien are we talking here? Because depending on the interpretation shipgirl biology can be very alien.

Edit: and come to think of it, all but the most human interpretations are pretty damn alien, considering the presence of damage control fairies.
At this point I'm fairly certain shipgirls are actually androids being run by faeries much like a regular ship is run by people. But, this is speculation by someone whose familiarity with Kantai Collection ends with Hannah Essex, Blackout's avvie, and your sheet. :V

Sufficiently alien biology is such that whatever is being converted doesn't run on conventional biology, which excludes things such as ink constructs, machines, undead, and so forth.

Hmmm, I guess I'd go for Xellos' suggestion for conventional means? The core possessing its own HP and Armor susceptible to anything, so if the worst happens she'd be a helpless project for the enemy to work on destroying or subverting at their leisure (unless some clever-pony dug her claws out of wherever her arms flew off to and tried those out for an insta-kill).

She can extend and modify portions relatively quickly (at one point she rapidly extends a membranous dish of sorts). More intensive efforts require practice and patience, her first attempt at a Hegius cannon didn't quite meet the spec for proper combat use and as seen in a few other ena-engineered constructions there's a significant amount of trial and error involved in getting the anatomy right for more complicated structures. She can't churn out an endless supply of this or that, apart from the conceit of her tentacles there is a finite amount of growth and tissue she can work with. Overall: no crazy shape shifting apart from the probe, no massive arsenal of organic weapons for the team.

What's odd to me is that Agility is higher than Strength. Not that they're high, I totally expected that, but which one is higher.

Ah! Yeah, she's a speedster. There are some issues with how fast she is next to the other mechs, especially since she doesn't believe in personal space since it's not like she's going to hit them. :V

Stats look to be within acceptable parameters. I'm not terribly worried since this one is basically pidgeonholed into a stationary tank/beatstick role with a few extra trappings and exploitable weaknesses.

Well, that's pretty much the common interpretation. And I think that would be enough for potion immunity. If so, should I go add that to the character sheet?
