Robb's claim rests on Shireens. Its also honorable to continue the Baratheon claim especially now that the Stormlands and Crownlands exist combined. Sure Baratheons took the place of Durrandons but they also keep all the important parts and Orys was backed by dragons.

Roberts claim to the throne was never especially strong but still relied upon the fact his family had recent Targaryean blood ties and it was a reasonable take over. Robb can't as easily shift the name to Stark even if technically the claim still exists through Shireen who he will wed since the situaiton is already complicated enough. It helps that the Stark name is not threatened while the Baratheon is given Shireen is the only true-born one to carry it on in a region where it has alot of support.

Best to attach ourselves to the Baratheon dynasty as much as possible, not only does it make the Targs more nervous but it makes it harder for people to call us a usurper

This. King Robert is very well remembered (though that doesn't matter quite as much with Kings Landing up in flames...), and our claim, dynasticaly speaking, comes as heir to the Baratheon legacy of stomping on the Targaryens. Best to emphasise that continuity.

We've had fierce debates and arguments about our policy, our strategy, our tactics, relations with other kingdoms, who to fuck... and now we're in a close-run vote about what name we're taking, and we're even presenting arguments about it. I love it, but in the depths of my sleep deprived mind, I suddenly thought: Why does it matter?

Yeah, I wouldn't mind taking up the Baratheon name.

I have to say that since the new Stark Dynasty will start with a marriage to the Rightful heir of the Seven Kingdoms, the transition won´t have any problem.

In most of Europeans Monarchies, the Dynasty Name came from the male, even if the male was a king Consort. For example, In Spain, the Trastamra Dynasty ended when Queen Joanna married Philip of Habsburg. Despite Philip being the King consort, all their children were considered Habsburg. And this has happened many times in many different monarchies.
