Semi-seriously though, filibustering might be an option here. One path gets us dead almost certainly, the other path stands a non-zero chance of getting us and Sansa dead. Delay, delay, delay and we might live long enough for a miracle.

As much as I'd like to go with the "fuck everything" option, I'm not willing to sacrifice Sansa's life for it.
 
But Sansa's also on the line. I'd be fine with sacrificing Eddard like this if she wasn't a factor.
We have Tywin, Tyrion, Jaime, Kevans sons and about 16 over western Lords as well as a straight shot to the capitol, if they kill all their hostages they are dead.

If they hurt her well....

Do we have any idea if news of the events in the Riverlands have reached King's Landing as well as Joffrey and Cersei?

I did a roll for how fast the news could travel. Robb moved quickly however. Kevan is the first person bringing the news. This is all happening prior to/at the same time as the attack on Jaime's forces according to the most accurate calendar I've seen. King's Landing knows what it does in canon.

Sansa will be horrifically abused, but she'll survive. And it's Joffrey. He's not going to care how many hostages we have or how important the hostages are. He's an impulsive vicious moron and he acts like it.

We have a straight shot to the capitol, and with no hostages even Cersei knows she'd be fucked and after this stunt she's not letting Joffrey touch Sansa, and as you said, Joffrey is a psycho, he wants to degrade and hurt her. He won't kill her much like he never did even in cannon once Robb was dead
King's Landing knows what it does in canon.
So Joffrey will act exactly the same most likely....

Well, Ned might as well die with some dignity and honour left

Cersei also wasn't willing to let Joffrey execute Ned because he was far too valuable as a hostage. Well, we all know how that turned out. Cersei can't stop Joffrey and she sure as hell can't control him.

If we have Ned speak the truth in front of all of King's Landing, can you really guarantee that Joffrey won't kill Sansa out of nothing but spite? I'm entirely unwilling to take that risk.

Yeah, angering Joffrey is just going to end up with Sansa abused worse than in canon or perhaps even killed if Joffrey is feeling particularly vindictive after we spill the beans. I'd rather avoid that risk and losing a bit of honor in the process is not much of a sacrifice.
Words and wind and when Sansa and Ned(if we're lucky) are free of the Lannisters, Ned can simply tell everyone that they threatened to kill Sansa if he didn't comply and told their blatant, ridiculous lie. Really, anyone important who knows Ned or have heard about him would know he wouldn't scheme like this and betray his best friend's memory.

Well, Cersei is powerful but she didn't want Eddard to die in canon and it happened anyway because guess what? Joffrey is the fucking king. If he tells Ilyn Payne to execute Sansa, she's going to get executed.

Two options I could see:

1. Tell the truth, mention that Sansa's life was threatened to keep us silent.
2. Demand trial by combat, pick some northern badass as Ned's champion.

Demanding a trial by combat, framed properly (this is the Sept of Baelor, and the peasants are pretty godly folk), is a completely valid write-in.
