We don't get as much innate magic right now, but as it happens we'll probably be more intelligent, which opens us up to being able to learn magic better later, if we'd like (convincing a wizard we're totally trustworthy apprentice material, puppydog-eyeing a warlock patron, that sort of thing). Even if we go for Bard classes, being able to convince people that we are not in fact merely a mellifluous slime pretending to be a person sounds like a pretty useful set of skills.

Isn't the 7 also an 8? 1 is the lowest number on the second roll of 9.

Figured it'd be that.

I expect that the mimic subrace get's Charisma, and the magic one would be Intelligence? Maybe Wisdom, but I think it'll be Int.

The corrosive one doesn't inherently lend itself to anything, but I assume it's Strength?

I'm going to assume that we'll end up having the 14 be the Con (with +2 bringing it to 16) and the 15 with whatever we get the +1 in, as our primary stat.
So that gives us:

We probably don't want to go for the classes that require more of a spread of points (Paladin, Ranger, Monk)
If we go with the mimic one, and I'm right that it's Charisma, we can go with Bard (little direct experience, but I think we'd be fine points-wise), Sorcerer, or Warlock. We should be able to do well enough in any of those, stats wise, though I think people want to go Bard for the memes? The meme often wins.

If we go with the magic one, and I'm right that it gives Int, we'd go Wizard. (We could also go Mystic, but I don't think any of us wants to deal with the headache that would be. I guess we could do Artificer, but I'm not sure how well-balanced it is. Eldritch Knight and Arcane Trickster are theoretically options, but run into the lack of ability points issue)

If it's Wisdom, then there is either Druid or Cleric. Druid is the one least dependent on stats, assuming we use wildshape often. If we went cleric, I can't even speculate what god we would worship.
 
Any of the charisma casters would be fine with me, really; the Bard is good for friendliness, the sorcerer for a more innate sorcerouslyness, and the Warlock because making a deal with a patron has the potential to be so much more than just selling your soul to a red person who stops by to antagonize you every once in a while (it might be a green person who teases you, or a bird person who wants you to do good things incognito, or a squid you're poking and sometimes it twitches and stuff blows up and you think that's neat).

I once saw a guy go bard with every point he had into diplomacy and charisma, I think he ended up with +17 on all diplomacy and speech rolls
