The problem with letting her get to know us before revealing who we used to be is that Ganondorf was also an adept deceiver, they wouldn't be unreasonable to believe we'd enchanted Briar or otherwise fooled her if they think we're Ganondorf.
Hell, it's going to be awkward anyway given that we're obviously Gerudo to anyone with knowledge of Hyrule and we're male at that, pretty much automatically making us the rightful King Of The Gerudo Thieves, which may be strange depending on their fate.
Also, yep, Great Fairy is scary.
I don't think we currently look like a Gerudo - we're too light skinned and our eyes are the wrong colour.
