Simo is the first thing that comes to mind when I think of "Modern Servants".

I think part of that is that he's the most well-know "Modern Servant." It's a feedback loop. A few people ranted about Simo being an awesome Modern Servant until everybody acknowledged him as the "standard" modern servant.
'Course, first non-Simo modern Servant to come to mind for me is Tesla.

From what I understand, the Luck stat, in canon, is meant to basically be a combination of conventional Luck and a Servant's ability to defy fate.
