Why can't we start our own company in the empire from the backing of another lesser sponsor like a lower-class noble, Burgomeister, disgraced high-class noble, or just work as an assistant for another engineer?
Well every engineer that recognizes us would not want to work with us let alone be their assistant unless they too were kicked out. And disgraced noble, burgomeister, or low class noble would not have the resources or money to sponsor us when they would see us as a risky investment when they store could be blacklisted by the Imperial institution for not having a degree. Plus we have a lot of quests in the Empire, I want a quest about an Imperial in another civilization.
The Bretonnian Navy, best in the old world and known for sporting gunpowder, will likely be very happy to accept an Imperial Engineer in their ranks so that's another option.

Fair enough, I don't know enough about Age of Sail era ships and how to improve them without making them unreliable with gadgets since reliablity is tbe most important thing on a military ship since maintenance and repair out in the ocean is not a good idea.

An engineer doesn't need to have cutting edge everything to be worth hiring. Just knowing how to make the things and maintain them is extremely valuable already. I'd be willing to bet we can find something to improve regarding the ships themselves too without turning them into steampunk monstrosities.
Then there's navigational tools like better compasses, star maps, telescopes and what have you.

I really like the idea of inventing all sorts of wild steam-powered stuff.
Steam Hammer that cracks Orc skulls real good? Nice!
Steam cannon that uses pressure to launch cannon balls great distances? Hell yea!
Steam-powered armor that lets us kill a troll with our hands? Yea baby!
Submarines! I love myself some deep sea exploration. The Dawi already have the Nautilus, but it runs into the problem of being very casualty prone, unable to last long submerged, and like all Dawi vessels, prone to suddenly exploding.
We can do better.
Flight would also be an option, but the Birdmen of Catrazza are already a thing and unlike Dawi engineering, could be replicated thanks to them being inventions of a human man. I'd rather we be more ambitious!
