How should the remainder of the five months prior to joining the sect be handled?

Generally speaking yes, some of the cultivation rolls have been unlucky, but this update the rolls were under the expected value for one and over it for two. But there are enough dice that the deviations aren't that large in either direction.
I've only really been paying attention to the Ghost Eyes and Physical Cultivation rolls, and those have been consistently at least a little under. Not statistically significant by any means. Just an amusing thing to note.

@Timewinders I am somewhat confused that we've reached Orange. This implies that Orange = Average Physical Cultivation 1.5, but Suyin was at avg phys cult 1.75 during our spar and she wasn't said to have hit Orange until we saw her at the New Year party. Something to do with Ghost Eyes Cultivation level? Could we get this clarified?

Stat sheet updated to Chapter 2.9.

We will enter the sect a single action away from learning Stone Skin. ~5.5 actions from Defense Cultivation 2. This is without herbs or tutoring. This means with 2 weeks of cultivation we can more than double our defense rolls.

Combining our Dodge and Defense rolls, we are currently slightly more tanky than killy. Defense Cultivation 2 will make us rather more tanky than killy, then Muscle Cultivation 2 will swing us around to be slightly more killy than tanky.

There isn't actually a true distinction between the different stages. It's based partly on Ghost Eyes, partly on physical cultivation. As cultivation in general increases the color changes. But whether it's reddish-orange or true orange is a matter of interpretation. Suyin wasn't at orange during the spar because while her physical cultivation was rather high, she hadn't reached orange in Ghost Eyes yet.
 
[X] Drive it off. While the thought was practically blasphemous to tradition, this phoenix wasn't much stronger than him if it was stronger at all. Since phoenixes were generally peaceful, if he stopped suppressing his aura and simply rushed at with his spear extended, he could likely scare it off. Then he'd be able to get away with collecting more than one dose of Celestial Lavender, since the phoenix had already stripped one of the plants bare. A bit duplicitous, perhaps, but two doses were going to be collected anyway.

At this point she will have been cultivating for 13 weeks. In 2 weeks she had Fire Bolt. That is 50 successes for Elemental Qi Control then 45 successes for the art itself. So a minimum of 95 successes in two weeks. If she maintained that sort of growth rate, and there's no reason why she shouldn't, in 13 weeks we can expect she has had a minimum of 617 cultivation successes. Average Physical Cultivation 2 costs 280. Each art between 45 and 60. We can expect her to have reached physical cultivation 2 across the board and have a bunch of arts to throw around. She will likely have around 100 more HP than us and ranged options that we are entirely lacking on at the moment. This spar is going to be rather soundly humiliating. As expected.

I'm not sure what the right choice is here. On one hand I can see how being someone who doesn't buy into superstition can be a benefit, on the other if there is something mystical about the phoenix maybe it's better to let it be. Ultimately the 2 doses swayed me, once we get to the sect having 3 does of Lavender for whatever new arts we have available there could be huge. But if appear nonthreatening wins I'd be fine with it too.
 
I'm not sure how much point there is to taking Celestial Lavendar to the sect. Presumably, cultivation herbs show up to Ghost Eyes, so everyone there will know we have them, as they can see straight through conventional matter, so they're pretty much impossible to conceal. Why wouldn't someone strong simply directly take them off us?
 
I'm assuming taking herbs off of a Sect member is pretty heavily frowned upon. What do you suggest we do with them? Leave them at home until we finish the Sect?

From Chapter 2.7, this should not be a concern.

It did not look unusual to his Ghost Eyes, as it was the medicinal properties of the herb that were important rather than the qi it directly possessed
So bringing the Celestial Lavender to the sect should be relatively safe, but best to use ASAP anyway.

I am curious what sort of rolls resulted in a Phoenix. Did we roll a weak spirit beast encounter and then get a beneficial roll or something?

Well, first I rolled for whether a spirit-beast would be present and then for the type of spirit-beast and its cultivation level. The chance of it being a phoenix was pretty small.
