Your lucky I'm considering dark souls at all, considering how unbelievably fucking salty I am over dark souls 3 pvp.
But if yes, if I did do a Demon quest it probably would be fresh from chaos... or you would be trying to reignite the flames of chaos... one of those.
Bloodborne is still more likely though, it being my current favorite of the Games using the Souls-formula

We learned that they were smart enough to:
1. Form a society of sorts
2. Become organized enough to have buildings and structures such as statues
3. Have a system of hierarchy that included a King.
In short, I think they might just be violently xenophobic, not necessarily dumb.
