I wonder what happens if you OVERheal someone - like, to use shitty mechanics for analogical purposes, say someone's at 5/10 HP, and Ichigo pushes enough healing in them to restore 50 HP, or 500; where does the extra energy go?

It's literally boosting their MP bar high enough to kick in their own regen, so either the healing is accelerated, the energy pours off of them like a full cup, or they explode.

No clue about higher end techniques.

well the simple techniques boost the bodies regeneration iirc, which is basically increasing cell division rates, so potentially overhealing could give you magic soul cancer if it doesn't just do nothing. More advanced techniques probably actively build/move body structures or generate blood etc, in that case "over healing" would essentially be making a surgical super soldier which seems more like the 12th divisions thing
