I'm still uncertain on what we want to be our main trade goods, but I know that having a carpentry workshop will be important for one big reason; barrels. They are the main container to transport goods in the medieval society, were highly regulated by every government, and came in standardized sizes. Our settlement will need a dedicated cooper to make all of the barrels we'll use.

I expect a lot of people won't be giving them back since a dwarven made barrel is going to be rather valuable.
