Personally, I doubt the Chaos Dwarves are interested in a manling that got kicked out of a manling school and have not even finished her education. Most likely we'd get collared and worked as a slave.

I think we would be better off going to other human civs and explore there. Estalia and Tilea are likely to be the best place to set up shop. Bretonnia is filled with dumb and poor peasants or nobles that are more likely to skewer us than buy any of our stuff. Kislev is too prideful to accept any help from an outsider so they aren't ideal. Cathay is an option but getting there would be extremely difficult unless we have the money to be part of a caravan and be armed enough to not get eaten by an Ogre. Even then we'd likely get krumped by Orc tribes than even reaching Cathay.

Why can't we start our own company in the empire from the backing of another lesser sponsor like a lower-class noble, Burgomeister, disgraced high-class noble, or just work as an assistant for another engineer?

The Bretonnian Navy, best in the old world and known for sporting gunpowder, will likely be very happy to accept an Imperial Engineer in their ranks so that's another option.
